Chanterelles Three Ways


How to infuse your favorite golden mushroom this winter

Every year between fall and winter, Chanterelle mushrooms are one of our favorite ingredients to cook with. These golden beauties are among the most popular eaten mushrooms due to their inviting fruity and nutty aromas and flavors. Chanterelles are also great for sautéing, baking, and incorporating into many different recipes, especially around the holidays.


Not only are Chanterelles delicious, but they packed with nutrients including potassium, vitamin C, and they offer some of the highest levels of vitamin D. It’s no wonder why mushroom hunters go nuts over these special fungi.


While we know there many ways to enjoy Chanterelles, we’ve curated a list of our top three favorite infused recipe ideas that combine the mushrooms with either CannaOil or CannaButter. These recipes are easy to make at home and will impress your friends if they are mycophiles like us.


Remember to wash your Chanterelles before cooking with them. Use your hands to rub off debris under cold water, so it doesn’t end up in your meal. Be sure to dry the mushrooms before using.


The recipes below are meant to serve four adults, but you can adjust by adding more or fewer teaspoons of CannaOil or CannaButter. Depending on the strain used, 1 teaspoon typically equals 10 milligrams of THC in The Herb Somm recipes.


 

Chanterelles Three Ways



1. Chanterelle Crostini Topped with Fresh Herbs


This recipe calls for CannaButter. First you’ll want to make homemade crostini using a french baguette, so preheat your oven to 350 degrees Fahrenheit. While the oven is heating up, cut the baguette into thin slices and coat each side with olive oil, sea salt, and a sprinkle of black pepper. Place the bread slices onto a baking sheet and put into the oven. Bake for 10 minutes and then flip the crostinis. Bake for another 10 minutes. Once the bread turns golden brown, remove from heat.


While the bread is cooking, cut the Chanterelles into pieces but keep the pieces large as they will shrink in the heat. Next, heat up 4 teaspoons of CannaButter and 1 tablespoon of regular salted butter in a saute pan. Stir the two butters together until blended well. Add in the Chanterelles and a pinch of salt and pepper. Saute until browned and tender. Remove from heat.


Using a spoon, scoop a spoonful of the sauteed Chanterelles onto the freshly made crostini. Top with chives or fresh herbs, and serve.


2. Cast Iron Baked Chanterelles


This recipe calls for CannaOil. Preheat the oven to 350 degrees Fahrenheit. While the oven is heating up, cut the Chanterelles in half vertically, so the mushroom pieces remain long. Set aside. Using a mixing bowl, combine 4 teaspoons of CannaOil, 2 tablespoons of olive oil, fresh rosemary, thinly sliced garlic, a squeeze of lemon, and a pinch of sea salt and pepper. Whisk together until blended well. Add in the Chanterelles and mix until the mushrooms are well coated with the oil mix.


Next, add the Chanterelles and 2 tablespoon of butter to a cast iron skillet. Top with fresh rosemary and thyme. Place skillet into the heated oven and bake for 20 - 30 minutes or until mushrooms are browned and tender. Stir once halfway through the baking time. Serve alone or on top of toast.


3. Brown Butter Chanterelles with Crispy Sage


As the name suggests, this recipe calls for CannaButter. Using a saucepan, heat up the pan over medium heat until it’s noticeably hot. Add 4 teaspoons of CannaButter and 4 tablespoons of salted butter, and stir until melted and blended. Add the Chanterelles and cook for about 6 to 7 minutes, or until the butter is browned. Add the sage and a pinch of sea salt. Stir continuously until the sage turns crispy. Remove from heat. This is the perfect topping for a thick pasta or winter ravioli. You can even add some parmesan on top to complete the meal!


Looking for an excellent wine pairing to go along with Chanterelles? Since these recipe ideas call for salt and butter, finding a crisp white wine to cut through the richness will be a perfect match. We’d recommend a refreshing Pinot Grigio. The high acidity of the wine will help balance the butter flavors on the palate, while the fruitiness of the aromatics will compliment the Chanterelles natural flavors.
